They use the noodles to tap the ref on the shoulder as time runs out. Sometimes ref not in position to see timer.

After watching a few matches I finally figured it out. They are running two refs a match and two matches at a time but the noodle ladies. I watched the end of the night. App went into the final match, the Heavyweight Championship, down 2.5 points. Dejournette went versus Johnson from UTC and being tied 2-2 late, Denzel reversed a takedown attempt into a slam and takedown of his own and smothered Johnson for the 3 points and the win.
